Il mio amore per la birra nasce all’inizio del nuovo millennio quando, come regalo di compleanno, ricevetti il mio primo fermentatore. Da subito diventai un bevitore più attento ed incominciai a cimentarmi nell’arte dell’homebrewing. Con mia grande soddisfazione gli esperimenti prodotti a casa raccolsero ampio consenso, non solo tra amici e consumatori occasionali ma anche tra gli esperti del settore. Qualche anno dopo Kuaska, considerato il massimo esperto italiano di birra belga e da anni attento promotore della birra artigianale italiana nel mondo, mi citò tra i migliori homebrewer italiani, incoraggiandomi ad entrare nel mondo professionale. My love for beer originated at the beginning of the new millennium when, as a birthday gift, I received my first fermenter. Immediately became a drinker more alert and began to experiment in the art homebrewing. To my great satisfaction the experiments produced at home gathered broad support, not only among friends and occasional consumers but also among industry experts. A few years after Kuaska, considered the leading expert of Italian and Belgian beer for years attentive promoter of Italian craft beer in the world, I cited among the best in Italian homebrewer, encouraging me to enter the professional world.

Brown Flemish ale inspired, 30 months aged with brettanomyces. Binde is nickname of our niece Matilde. She drew the label. The name refers to Matilde di Canossa whose history is joined to the famous Orval Monastery.

This beer is inocculated by wild yeasts (Brettanomyces included) and lactic bacteria. Small, dark and very sweet Damaschine variety plums, also called Ramassin in Piemontese dialect, are added in steeping to restart a new fermentation to characterize the product. BeerBrugna is matured in oak barrels (3hl or 5hl capacity) for twelve months.
